Soften the corn in the chicken broth for 20 minutes in a pressure cooker.

Once the corn is tender, transfer it to a rice cooker. Add the cleaned and rinsed rice, then cook, adding the packet of Goya seasoning and salt to taste.

While the rice cooks, make an omelet with the egg and cut it into small squares. Set aside.

Cut the smoked pork loin into small pieces and chop the vegetables into medium strips.

In a skillet with hot oil, sauté the smoked pork loin well, then add the vegetables. Continue sautéing until everything is well cooked.

Add the egg and mix well.

When the rice is done, stir it and transfer it to a larger pot.

Add the smoked pork loin and egg mixture, then add the chopped celery leaves. Mix everything together very well.

It’s ready to serve. You can serve it with salad and tostones (fried plantains).
