  1. Ingredients for the stuffed cabbage rolls
  2. 1 1/3 lbsground pork (from pork leg) (about 640 grams)
  3. 1 lbground beef (about 470 grams)
  4. Tomato sauce
  5. 1large head of cabbage
  6. Seasoning for the meat
  7. 2 clovesgarlic, minced
  8. 1/2 cupfinely diced onion (about 80 grams)
  9. 1 tablespoonchopped parsley
  10. 1 tablespoonchopped oregano
  11. 1 tablespoonchopped thyme
  12. 1 3/4 teaspoonssalt
  13. 1/4 teaspoonground black pepper
  14. 1beaten egg
  15. 1/2 cupbreadcrumbs (about 30 grams)
  16. Tomato sauce
  17. 2 tablespoonsolive oil
  18. 1 cupfinely diced onion (about 160 grams)
  19. 3 clovesgarlic, minced
  20. 1 tablespoonchopped fresh oregano
  21. 1 tablespoonfresh thyme leaves, chopped
  22. 1 tablespoonchopped parsley
  23. 1 cupwhite wine (about 240 ml)
  24. 1bay leaf
  25. 3 1/2 lbstomato purée (about 1.6 kg)
  26. 1 lb (13 oz)diced tomatoes with their juices (about 820 grams)
  27. 1 tablespoonchopped fresh basil or pesto

Steps

    PREPARE THE MEAT
    In a large mixing bowl, combine all the seasoning ingredients.
    Add the ground meats and mix well.

    PREPARE THE CABBAGE
    Fill a large pot halfway with water and bring to a boil.
    Use a knife to cut out and remove the core from the back of the cabbage.
    Place the cabbage in the boiling water for 4 minutes, then remove and cool with water.
    Separate the cabbage leaves and lay them out on the table.
    Fill the leaves with the ground meat mixture and fold them up like an envelope. Place the stuffed cabbage rolls on a baking tray.

    MAKE THE TOMATO SAUCE
    In a skillet, heat the olive oil and sauté the garlic and onion.
    Add the herbs and white wine, and let it reduce.
    Add the salt, pepper, diced tomatoes, tomato purée, and bay leaf. Bring the sauce to a boil, then simmer gently for about 25 minutes.
    Stir in the basil or pesto and cook for 5 more minutes. Let the sauce rest.

    BAKE THE STUFFED CABBAGE ROLLS
    Pour the tomato sauce over the stuffed cabbage rolls, cover with plastic wrap and aluminum foil. Bake in the oven at 350°F (178°C) for about 45 minutes.
