Falooda is a popular summer dessert in India. Originally from Iran, this drink is enjoyed not only in Iran but also in India, Pakistan, Myanmar, Bangladesh, the Middle East, and Turkey. In India, Falooda was introduced by the Parsi community who migrated from Iran. Falooda is made with basil seeds (sabja), falooda noodles, rose syrup, and milk. You can also add ice cream. Besides rose falooda, it can be made with mango, strawberry, pistachio, saffron, chocolate, and various fruits. Since it's mango season, today I've made mango falooda.

Ingredients

20 minutes
Serves 1 serving
  • 1 cupmango pieces (about 165 grams)
  • 1 cupmango pulp or puree (about 240 ml)
  • 1 cupsweetened thick milk (about 240 ml)
  • 2 tablespoonsbasil seeds (sabja) (about 20 grams)
  • 2 tablespoonsfalooda noodles (about 20 grams)
  • 1 scoopvanilla or mango ice cream
  • For garnish:
  • A fewpieces of tutti frutti, as needed
  • A fewsliced pistachios, as needed

Steps

20 minutes
  1. 1

    Soak the basil seeds in 1 cup of water for 15 minutes until they swell. Cook the falooda noodles according to the package instructions and set aside.

    Place the serving glass in the refrigerator for 30 minutes to 1 hour to chill.

  3. 3

    Add some mango pieces to the chilled glass, then add 1 tablespoon of soaked basil seeds and 1 tablespoon of falooda noodles.

    Pour in some mango puree and sweetened milk.

    Repeat steps 3 and 4 until the glass is filled.

  6. 6

    Top with a scoop of ice cream and garnish with tutti frutti, sliced pistachios, and extra mango pieces. Serve chilled. You can also add rose syrup if you like.
