Ingredients

  • 2Raw Mangoes
  • 1 CupMustard Oil
  • 1 tbspTurmeric Powder
  • 2 tbspnFinely Pounded Mustard seeds
  • 1/2 tspFenugreek Seeds + 2 tsp Fennel Seeds.(Coarsely Pounded)
  • 1 1/2 tbspnKashmiri Red Chilli Powder
  • 1/2 tspRed Chilli Powder
  • 1/2 tbspAsafoetida
  • 1 tbspnSalt (or According to taste)
  • as required Muslin Cloth to cover the pickle

Steps

  1. 1

    Wash the mangoes thoroughly. Chop them into small pieces.

    Now grind the mustard seed into a fine powder.
    Also Coarsely grind Fennel Seeds and Fenugreek Seeds.

    In a bowl put chopped mangoes. Add in all the spices. Turmeric Powder, Powdered Mustard seeds and coarsely grounded Fenugreek seeds and Fennel seeds.

    To this add Kashmiri Red Chilli Powder and Red chilli powder. Add salt for taste and Asafoetida.

    Finally add Mustard oil and give it a good mix.

    Put a muslin cloth from top. Keep it covered in the sun and allow the pickle to mature for 3 to 4 days. (We like our pickle slightly raw, if you wish to make it soft and ripe, keep it in the sun for a week to 10 days.)

    Serve these delicious Punjabi Mango Pickle with Paraths, Roti sabzi or dal rice!
