My Pickled Mustard Seeds

Use on eggs, add to salads, meats and add to whatever else you want. They're good on everything.
Cooking Instructions

In a saucepan, combine the mustard seeds and vinegar and soak for 1 hour.

Once hour is up, add the salt, sugar, worcestershire sauce, garlic, dill weed and chicken soup base and bring to boil.

Lower the heat to a simmer and let seeds cook for 25 minutes or until the seeds are tender and will pop when you chew them.

Pour into a mason jar and put in refrigerator, until ready to use.

☆☆☆NOTE:
Once cooked, the seeds will thicken the liquid significantly so when it's cooled the mixture will be thick like mustard.

Mustard Pickles / Piccalilli
I have been using this recipe for a long time. It is very easy to adjust to your own taste and you can use any vegies you prefer. This amount here makes about 3 pint jars of pickle. Good for cheese and crackers, sandwhich spread and goes great with corned beef. In this recipe I used cauliflower, zucchini, red and green pepper/capsicum, celery and onion.

Easy Pickled Eggs
This is a wonderful and healthy southern snack my family makes on occasion. This is my version of it and I sometimes turn these into pickled deviled eggs also.


Pickled Onions
This recipe is not an original. I learnt the basics from my Aunty and have since altered some ingredients and methods which I found by trial and and error and my good friend google. For instance I learnt from the internet that if you soak your onions in boiling water for about 30 seconds, then put them in the sink with cold water, peeling them is so much easier. I use a pressure cooker to sterilize my jars. You can add up to 1 tbspn of brown sugar to the vinegar mix to sweeten a little. Use any vinegar you prefer, this is a good recipe to experiment with. Omit the chilli flakes if you dont like them but the finished onions are not very hot and the chilli does give a nice subtle tang. One other tip. If you double up on the recipe, no need to use double the amount of salt. I use just a pinch or so more only when I prepare 2 kilos of onions.

I grow my own produce and preserve it by canning it. I got these eggs at the farmers market the other day and wanted to jar them up. With this recipe you can double or triple it. Homemade Whole Grain Mustard
I read an article about making mustard and was surprised to learn that making your own was quite easy! Usually yellow and brown mustard seeds are mixed, but I often make this with just yellow. Brown seeds are sharper and more pungent, so play with the ratio! This is the basic recipe, but once you get the hang of it, try adding other sweeteners, herbs, spices, etc. I like to make a little bit at time so this recipe will make about 1/2 cup.

My Ploughman's Pickle

When I brought a bag of ten of these lightly pickled cucumbers to a barbecue they quickly disappeared.Add the ginger and sesame oil at least 10 minutes after you season the cucumber with salt to allow the cucumber flavour to shine through.When in a rush, you can use less salt than usual and add the sesame oil and ginger a bit earlier.
