Mustard Relish

Had way too many cukes from garden then humanly possible to eat, So I did some research, made this recipe & well It's Pretty Good, considering I don't even like relish :) It is a little time consuming however, but really worth it, u can double the recipe for larger batches

Steps

cut peppers and onion into small chunks
- 2
peel cucumbers and remove seeds (slice on either side of seeds, use sm spoon to scrape out)

put cut up cukes pepper & onion in salt bath [1/2 cup salt) brine] and let sit minimum 3 hrs -overnight

heat to boiling, vinegar sugar & spices

add veggies, bring back to boil

boil gently until desired tenderness & consistency, add tbsp flour to small part water & add to boiling mixture if needed
