Ingredients

30 minutes
  • 1 kgsweet ripe mango
  • 3-4 tbspsugar or as required

Steps

30 minutes
  1. 1

    Firstly take out the pulp of mangoes and blend it till smooth without water. Seave the pulp through Strainer.

    Heat a big heavy bottom kadai, add mango pulp. Keep the flame on low-medium. Add sugar, Adjust sugar according to tartness of mangoes. Cook till the pulp thickens.

    When it's thick enough as shown in pictures turn off flame.
    Divide the purée evenly between 3-4 greased plates, and using an off-set spatula, spread the purée as flat and as evenly as possible.

    Keep the plates under fan for overnight and under sunlight for 1 day or till the top become dry and non sticky. I use to cover it with net to avoid sticking of dust.

    Scratch the sides with knife and the leather will easily peel off. Cut leathers into strips and roll it.
