Stir-fry the carrot slices, green onion pieces, wood ear mushrooms, and shimeji mushrooms in order until fragrant.

Add the mackerel sauce and stir-fry, then add water and bring to a boil. Add the mackerel meat and simmer.

Meanwhile, bring a pot of water to a boil and blanch the Guanmiao noodles and baby bok choy.

Once the soup is flavorful, combine it with the noodles and serve.
