Baigan ka bharta or ringan no olo is a traditional lein kaithyawadi dish. This is the most popular and best gujarati dish ,especially enjoyed during winter. In some region it is known as baigan ka bharta

Baigan ka bharta or ringan no olo is a traditional lein kaithyawadi dish. This is the most popular and best gujarati dish ,especially enjoyed during winter. In some region it is known as baigan ka bharta

Apply some oil on brinjal and roast them well on gas flame,when it is roasted remove the burn skin and stem and mash it properly

Take a pan,add oil when heated add onion and saute it then add tomato and cook for sometime when oil seprates from the side add all masala and mix it properly. Add salt and cook for 4 to 5 minutes.

Baigan bharta is ready garnish with fresh coriander and serve hot with bajra no rotla,green chilli and ghee jaggery with chilled chaas.

For bajra rotla
Take bajra atta knead it with hot water and make a soft dough. Take some dough make a small ball and taking dry flour pat it on surface by keeping plastic sheet and make a round shape. (It it breaks use dry flour)Roast it on a tawa from both side and apply ghee after roasting.
