Omelet Piccata with Pork Offcuts

Originally I wanted to cook piccata with inexpensive pork, but I wanted to make it more voluminous, so I made it into a big omelet.
Since it's a thick omelet, cover with a lid and steam-fry at the end to cook the pork through. Recipe by Puyoringo

Steps
- 1
Sprinkle the pork with salt and pepper. Dust with flour and mix well.
- 2
Beat eggs, add the easy melting cheese and Step [1]. Mix well.
- 3
Heat oil in a pan, and pour in the Step 2 mixture.
- 4
Stir gently, and cook the pork through.
- 5
When the egg starts to cook, move it to the side.
- 6
Flip, and make an omelet shape.
- 7
Turn down the heat to the lowest setting. Cover with a lid, and steam-fry for about 2 minutes to cook through.
- 8
Done.
