In a wok roast the Sooji or vermicelli for 2-3 mins until slightly brown in colour. Set aside

In the same wok heat 1 Tbsp ghee and oil, add mustard seeds and Urad Dal, Chana Dal, fried cashew nuts. Fry for 2-3 mins. Add Chopped onions, green chilies and ginger and cook for 2-3 mins.

Add water and bring it to boil quickly by covering. Set aside the cover and add sooji slowly while stirring simultaneously to avoid any lumps.

Once all sooji added, stir and add salt and on low flame stir once. Close the flame, add ghee and keep it covered for 3-4 mins.

Add lime juice and serve hot. Enjoy on its own or with coconut chutney
