Preheat the oven with a pizza stone for 30 minutes at 450-480°F (230-250°C).

Prepare the topping: Cut the onion in half, peel one half, and slice it thinly. Cut the smoked bacon into small strips.

Prepare the cream: Mix 1/3 cup crème fraîche (100 ml) with 2 tablespoons heavy cream (30 g), add a pinch of salt, and set aside.

Cook the bacon: In a skillet over medium heat, cook the bacon strips for about 10 minutes, turning occasionally, until crispy. Set the bacon aside.

Cook the onions: In the same skillet used for the bacon, cook the sliced onion over medium heat for 5 minutes, stirring, until golden. Add 3 tablespoons white wine (50 ml) and cook until the wine has completely reduced, about 10 minutes.

Assemble the Flammekueche: Place the Flammekueche dough on a pizza peel. Spread all the cream mixture evenly over the dough, leaving a 1/2-inch border. Season the cream with black pepper. Distribute the bacon over the cream, then add the onions on top.

Bake and serve: Quickly slide the Flammekueche onto the pizza stone. Bake for 10 minutes. Transfer to a cutting board and slice into 6 pieces.

Variations: You can substitute the bacon with mushrooms, pieces of salmon, or goat cheese with honey. The onion can be replaced with shallots.
