Add both flours and the yeast to a stand mixer.

Mix while gradually adding the water and salt until you have a smooth, even dough.

Let the dough rise for about 1 1/2 hours.

Prepare the filling: Cut the mozzarella into small cubes and finely chop the cooked ham.

Divide the dough into 10 pieces.
Roll out each piece with a rolling pin to form a circle. - 6
Place the filling in the center and fold the dough over to make a half-moon shape. Press the edges to seal the panzerotto well. Remove any excess dough and seal further by pressing the edges with a fork. Repeat with the remaining dough pieces.

Preheat the air fryer to 400°F (200°C) for 2 minutes, then place 3-4 panzerotti in the basket at a time.

Add a teaspoon of olive oil and cook for 4 minutes at 400°F (200°C). Then flip the panzerotti and cook for another 3 minutes.
