Ingredients

10 panzerotti
  • 1 cupall-purpose flour (about 150 grams)
  • 1 cupfine semolina flour (about 150 grams)
  • 3/4 cupwarm water (about 185 grams)
  • 1/2 teaspoondry yeast (about 2 grams)
  • 2 teaspoonssalt (about 10 grams)
  • 1 teaspoonolive oil
  • For the filling
  • 2balls mozzarella cheese
  • 5 ozcooked ham (about 150 grams)

Steps

    Add both flours and the yeast to a stand mixer.

  2. 2

    Mix while gradually adding the water and salt until you have a smooth, even dough.

  3. 3

    Let the dough rise for about 1 1/2 hours.

  4. 4

    Prepare the filling: Cut the mozzarella into small cubes and finely chop the cooked ham.

  5. 5

    Divide the dough into 10 pieces.
    Roll out each piece with a rolling pin to form a circle.

  6. 6

    Place the filling in the center and fold the dough over to make a half-moon shape. Press the edges to seal the panzerotto well. Remove any excess dough and seal further by pressing the edges with a fork. Repeat with the remaining dough pieces.

  7. 7

    Preheat the air fryer to 400°F (200°C) for 2 minutes, then place 3-4 panzerotti in the basket at a time.

  8. 8

    Add a teaspoon of olive oil and cook for 4 minutes at 400°F (200°C). Then flip the panzerotti and cook for another 3 minutes.
