Ingredients

40-45 minutes
4-5 people
  • 10-12baby potatoes
  • 3onion
  • 4-5tomatoes
  • 6-8garlic colves
  • 1/2 inchginger
  • 1-2green chilli
  • For dry masala-
  • 2-3Bay leaves
  • 10-11whole black pepper
  • 4-5dry red chilli
  • 5-7green cardamom
  • 1star aneez
  • 1 tspcumin seeds
  • 2 tablespoonsoil + for frying
  • as per tasteSalt
  • 1 tspturmeric powder
  • 1 tspred chilli powder
  • 2 tspdhania powder
  • 1 tspgaram masala
  • 1 tspdry mango powder

Steps

40-45 minutes
  1. 1

    Peel the potatoes and keep it in water and prick the potatoes with the help of a fork. Then deep fry it and keep aside.

    Churn onions, garlic and green chilli together and make a fine paste. After that churn tomatoes and ginger together and make a paste. Heat oil in a heavy bottom pan add all sabut (whole) masale and fry for 2 minutes then add onions and fry till golden brown then add tomatoes and all remaining masale and add a little water and cover it.

    After 10-12 minutes when oil separates from masala add fried potatoes and a dash of water and again cover it for 4-5 minutes. After that add water as per the consistency of the gravy you want. Garnish with fresh cream and coriander leaves. Enjoy this with rice or lachha paratha(see recipe)
