Ingredients

  1. 2 cupsuncooked Penne
  2. 4 pcs.Skinless Longganisa
  3. 4 clovesGarlic, minced
  4. 3 pcs.medium Tomatoes
  5. 2 tbsp.Capers, chopped
  6. White wine, optional
  7. Chili flakes, salt & pepper
  8. 2 tbspOlive oil

Cooking Instructions

  1. 1

    Grilled tomatoes. Once cooled, remove skin and seeds. Sliced thinly.

    Cook pasta according to package.

  3. 3

    In a pan pour olive oil, saute garlic

  4. 4

    Add longganisa, cook for around 5 minutes

  5. 5

    Add tomatoes, capers and chili flakes

  6. 6

    Pour some wine, season with salt and pepper

  7. 7

    Add cooked penne, mix add more freshly ground pepper.

Looks good. I’m unfamiliar with that type of sausage, which might not be easily available in the U.K. but I’m sure a suitable substitute can be identified.
