Ingredients

  • 1 cupWheat flour -
  • 1 tbspolive oil
  • As neededLittle water to form a dough
  • Ingredients For spicy pani
  • as required. Fresh coriander leaves+ 2 green chillies + mint+raw mangos
  • 50 gDry Mango Powder
  • 25 g Roasted Cumin Powder
  • 25 gRed Chilli Powder
  • 10 Black Pepper Powder
  • 10 gFennel Powder
  • 1 tsp. Black Salt
  • to taste. Salt
  • 1/4 tspHing
  • 9. Bundi
  • Ingredients for filling
  • 2Boiled and mashed potatoes.
  • as per your tasteSalt .
  • 2 tsp red chilli powder
  • For meetha pani
  • 3/4 cupjaggery + 1 tbsp salt+ 1/2tpn garam masala+ black pepper
  • As neededChilli powder+ chaat masala+ 2 spoon raw boiled mango pulp

Steps

  1. 1

    Puri - 1. take wheat flour or semolina and add little water at a time and knead it to form a dough. Dough should neither be too hard/thick nor too soft/thin or sticky. It should have medium.

    2. Cover the dough with a damp muslin cloth or tea towel, keep it aside for 30 mins. After 30 mins, divide the dough into 8 or 10 equal sized uniform balls.

    3. Roll out each ball into very thin circles uniformly. Flip and fry till golden brown and crisp.

    For spicy pani

    Mix all the ingredients well and store in a jar.

    When you want to use it, grind 1 cup coriander, 1 cup mint, 1-2 green chillies and ½ inch piece of ginger to a fine paste.

    Add 2 litres of water to the paste and 2 tbsp of boiled raw mango pulp, black salt,garam masala, Cumin powder, coriander powder chaat masala, red chilli powder and mix it well.

    Method of meetha pani
    Take 1 ltr water add jaggery, 2 tbsp raw boiled mango pulp, 2 tbsp coriander and mint paste, red chilli powder, coriander powder, black salt, chaat masala, bundi, black pepper and mix it well

    For filling
    Take boiled and mashed potatoes and add chopped onion, green coriander and mint chutani, chaat masala, salt as per taste if you like more spicy than add 1 green chilli
