Chaler payesh is a type of rice kheer prepared with Bengali style. In Bengali language 'chal' meaning rice and 'payesh' meaning kheer. Whole spices like bay leaf, cinnamon and whole cardamom are added while its cooking and that makes it different from other types of kheer. These spices give it a very nice flavour. Kheer is usually prepared during festivals or occasions. It is prepared with very basic and minimum ingredients. This kheer is prepared by reducing milk which makes it really delicious.

Ingredients

6 servings
  • 6 tbsprice
  • 1 tsp ghee /clarified butter
  • 1.5 ltrfull fat milk
  • 1bay leaf
  • 1 inchcinnamon
  • 5green cardamom
  • 3/4 cupsugar
  • 6-8almond
  • 6-8cashewnut
  • 1 tbspraisins

    First of all wash rice and soak it. Use any short grain rice instead of basmati rice. Chop almond and cashew nuts and keep it ready.

    Apply ghee at the bottom of a pot and add milk to it. Now add bay leaf, cinnamon and cardamom to it. Bring it to a boil and lower the heat and let it cook until it is reduced by 25%. Now add soaked rice to it and cook it until rice is almost done. Keep stirring frequently.

    Now add sugar to it and give it a good mix. Cook it until rice is completely cooked. Now add almond, cashew nuts and raisins to it and give it a good stir. Turn off the heat. Let it cool down at room temperature and then chill it in the refrigerator.

    Kheer can be served warm or chilled.
