Okara Fried Rice

Lately I've been all about okara, so I was thinking of a recipe I could eat everyday without getting tired of it. I wasn't coming up with anything, but while making fried rice for my kid I thought of this. I tried making it and it was delicious, so I made a recipe out of it.

If you use Chinese soup for the dashi stock it becomes even more like fried rice b Using coarsely-ground black pepper gives it a spicy kick that's even more delicious You can mix up fried rice with the ingredients used and the flavoring, for something you can enjoy everyday Eating it with your desired vegetables or seafood in a thick sauce gets rid of the dry feeling, and you can enjoy a delicious thick sauce fried rice. Feel free to modify the dish to your preference. Recipe by Momopi-

Ingredients

  • 100 gramsFresh okara
  • 1Egg
  • 1Wiener (or bacon or ham)
  • 1/2Japanese leek
  • 100 mlDashi stock (1 teaspoon of granulated dashi + water is also OK)
  • 1Salt and pepper

Steps

  1. 1

    Mix the okara and the egg together and set aside. Cut the wiener into whatever sized pieces you like (I used Spam). Mince the leek (or whatever vegetables).

  2. 2

    Lightly oil a heated frying pan and cook the wieners and leek. Lightly season with salt and pepper.

  3. 3

    Once the leek has wilted, add the okara and cook until it's generally broken up. Mix everything together, then add the dashi stock and cook to your desired moistness. Use salt and pepper to adjust the taste and it's complete.
