I've been fascinated with Staub cookware since the fall of 2012, and I've been experimenting with all kinds of recipes using it when I find time. This is one recipe I settled on after many, many tries.

Ingredients

  • 1ones that will fit in the pan. the fattest parts should be 5-6 cm. Sweet potatoes
  • 1Vegetable oil

Steps

  1. 1

    Lightly grease the Staub cocotte with oil, and line with parchment paper or aluminum foil. Wash the sweet potatoes and line them up in the pan so they are not touching each other.

    If the sweet potatoes are too big to fit in the pan, cut them in half.

  3. 3

    Add 30 ml water. Cover with the lid and steam-cook over medium heat. *Set your kitchen timer for 10 minutes.

    After 10 minutes, take off the lid with one hand, and quickly turn over the sweet potatoes with the other hand, using tongs. Replace the lid immediately.

    Continue cooking the sweet potatoes over medium heat. *Set your kitchen timer for 8 minutes.

    After 8 minutes, take the lid off again and quickly turn the sweet potatoes so the sides are touching the bottom of the pan. Add 30 ml water and cover with the lid.

    Lower the heat to the lowest setting. Set your kitchen timer for 15 minutes.

    After 15 minutes, take the lid off with one hand and quickly turn the sweet potatoes over with the other hand, using tongs. Replace the lid immediately.

    Continue cooking over low heat. Set your kitchen timer for15 minutes.

  10. 10

    I've written detailed instructions... but you turn the sweet potatoes 4 times to cook them on all sides. The first 2 times they are cooked over medium heat, and the last 2 times they should be cooked over low heat.

  11. 11

    After 15 minutes (Step 9), take off the lid and see if you can pierce the sweet potatoes easily with a skewer. Replace the lid, turn off the heat and let sit for 15 minutes.

    After sitting for 15 minutes, they're done.

  13. 13

    Piping hot and moist... and sweet Please be sure to try these baked sweet potatoes, made delicious by using Staub.

  14. 14

    This recipe calls for sweet potatoes that are 6 cm thick at the fattest part. I found that fatter ones take a really long time to cook.

  15. 15

    Adjust the cooking time in Steps 9-11 according to the size of the sweet potatoes.

  16. 16

    The recipe says that Steps 9-11 will take 30 minutes, but this may take at least 50 minutes if the sweet potatoes are fat.
