Ingredients

Serves 4 servings
  1. 1 bunchwater spinach
  2. 1large garlic bulb or 2 small ones
  3. Coarse salt
  4. Cooking oil, 1/2 tablespoon sugar, 1 1/2 teaspoons seasoning powder, 1 1/2 tablespoons oyster sauce

    Trim the water spinach, including both leaves and stems, into bite-sized pieces about 3 inches long (you can separate the leaves for soup and stir-fry the stems if you prefer). After trimming, soak in salted water for about 5 minutes, then rinse thoroughly and drain.

    Mince half of the garlic and slice the other half into larger pieces.

    Heat a pan, add oil, and when the oil is hot, add the garlic and sauté until fragrant and golden. Add the water spinach and stir quickly over high heat for about 30 seconds. Add 1/2 tablespoon sugar, 1 1/2 tablespoons oyster sauce, and 1 1/2 teaspoons seasoning powder, then stir quickly for another 30 seconds.

    Cover the pan for 30 seconds, uncover and stir the water spinach, then cover again for another 30 seconds. Turn off the heat. Immediately transfer the water spinach to a plate; don't leave it in the pan too long, or it will become too soft and lose its vibrant color. The finished stir-fried water spinach will be glossy, with a slightly sweet and savory sauce. Give it a try! Good luck!
