Steps

Firstly heat a pan. Add 2 tbsp of oil to it. Then add chopped bhindis to it. Fry the bhindis until it changes its color. Remove them from the pan and keep them aside.

Again add 2 tbsp of oil and add jeera, bay leaf, cardamom. Let them splutter, then add Kasuri methi in it. Now add grated onion to it. Fry them together for about a minute then add ginger-garlic paste to it. Mix everything well and fry the onions until golden brown.

Then add dried masalas like turmeric powder, Kashmiri red chili powder, cumin powder, coriander powder, garam masala powder, salt, and sugar. Now mix everything well and fry the masalas on a low flame for few minutes.

Then switch off the flame and add curd to it. Combine everything well then on the flame again and keep the flame at the lowest. Add 1/4th cup of water and give it a mix. Now cover the flame and let it cook until oil starts separating from the curd.

Then add fried bhindis to it. Then again cover and cook for 7 to 8 mins more on a low flame. Then open the lid, sprinkle some chopped coriander leaves and serve it hot with some puris or parathas.
