  1. 5peeled and slicedIrish potatoes
  2. 2 cupsbasmati rice
  3. Oil for cooking
  4. Onion
  5. Grated Scotch bonnet pepper
  6. Garlic ginger paste
  7. Seasoning and salt
  8. Spices
  9. Garlic powder
  10. Ginger powder
  11. Cumin powder
  12. Coriander powder
  13. Black pepper powder
  14. leafBay
  15. Turmeric powder
  16. Curry powder

Steps

1hr 30 mins
  1. 1

    Soak basmati rice for 45 minutes

  2. 2

    Add oil in a pot with bay leaf, onions and saute

  3. 3

    Add grated Scotch bonnet pepper and water (depending on quantity of rice)

  4. 4

    Add in sliced potatoes with spices and season to taste

  5. 5

    Cook until potatoes is fork tender then add soaked rice and cook

  6. 6

    Serve
