Ingredients

  • 3 cupsall-purpose flour
  • 1 teaspoonbaking powder
  • 1 teaspoonsalt
  • 1/3 cupsunflower oil (or any other oil of your choice)
  • 1 cupwarm water
  • Crunchy Surprise
  • 2small eggs (or 1 large egg)
  • 1 cupHinds Southern Coating
  • 1/3 cupBread crumbs
  • 1/2Cauliflower head
  • Fresh lettuce
  • Tomato

    Rinse your cauliflower in salt water to remove parasites. Then boil it for about 4 minutes. Let it cool off.

    While you let your cauliflower cool off, mix all the tortilla's dry ingredients: flour, baking powder and salt.

    Once the dry ingredients are fully blended, make a center inside the dry mixture then add oil and water.

    Mix the ingredients until the mixture has a flaky texture. Once you have that texture, Knead the dough onto a lightly floured surface until it is one big ball.

    Then make balls with you hands out of the dough. Take the balls and put them on a plate, making sure that one ball does not touch the other (social distance vibes😉). Cover the balls for at least 15 minutes with a clean dry cloth.

    Prepare three bowls. One will contain a beaten egg/eggs, the other will contain your one cup of Hinds Southern Coating. The third bowl will be to place the coated cauliflower.

    Before you begin, preheat a pan with some oil in it. Ensure that the heat is low, as high heat will burn the cauliflower. Dip the cauliflower in the eggs/egg. Then into the Hinds Southern Coating, and back again into the eggs, then into the Southern Coating and back into the pan.

    Drain the oil once the particles in the pan burn, as it can affect your cauliflower. And wipe the pan with paper towel. Then pour fresh oil.

    After you're done with the cauliflower, roll the dough balls you placed aside earlier. {see Step 5}

  10. 10

    Preheat another pan, preferably a non-stick pan. And place the rolled out tortilla into the pan. Let the dough bubble up, in the pan after about 13 minutes (for the first one only) flip the tortilla.

    Spread mayo on the wrap place lettuce over it, slice some tomatoes add the cauliflower in the center. Roll it over, and bamwam you have your tortilla and crunchy surprise. You can also add other variables to the meal, like some sauces, some veggies, maybe even a strawberry. Have fun and enjoy.
