Shakarpara | Wheat Biscuit

During our childhood, all my cousins and mothers would gather in our grandmother’s home for summer vacation. And our mothers prepared variety of sweets and snacks. We would enjoy it for couple of weeks. One of such snack is Shakarpara liked by kids and elders. We call it Godhi biscuit in Bangalore which means Wheat biscuit.
Shakarpara is crispy, crunchy Indian sweet snack. It is basically sweet wheat biscuits that is diamond shaped biscuits deep fried as a munching snack.
It can be made with minimal ingredients available in every kitchen. Simple snack recipe that is made made with wheat flour, milk, sugar, sesame seeds and ghee. Dough is prepared, shaped into diamonds and deep fried in oil.

In a pan boil milk, switch off the flame and add in sugar. Stir to let the sugar melt completely. Leave it cool down to room temperature.

In a bowl take wheat flour, sesame seeds and mix. Add in melted ghee and mix in to the flour well. The flour should be crumbly and hold its shape when pressed with fist.

Add in milk-sugar mixture little by little, combine well and knead to a smooth and soft dough. (Add milk- sugar mixture as and when required. Don’t add in all together). Cover and let the dough rest for 5 minutes.

Divide the dough into 3 portions and roll it slightly thick like paratha. Trim off the edges and cut into diamond shape of desired size. Arrange the diamonds on a tray. Prepare diamond shaped dough from remaining dough.

Heat oil in kadai on medium flame. When oil is just hot, slide the cut diamond shaped dough and fry on medium to low flame until golden. It takes around 5 minutes. Drain onto a tissue paper. Spread them on a tray until it cools completely. Store it in airtight container and enjoy it for couple of weeks.

Serve crispy and crunchy Shakarpara.
