Garlic Butter Roast Chicken with herbs

Mix the melted butter, olive oil, wine, parsley, salt and pepper and lemon. Massage the chicken with the mixture thoroughly inside and outside

Stuff the garlic, lemon leaves, upper half of lemongrass, rosemary and lemon halved inside the chicken. Tie the chicken legs together.

Preheat the oven to 400F or 200C under fan force for 10mins.
Toast for 1 hour
then turn down to 340F or 170C for another 15mins.
Baste half way through the toasting time. - 4
Take the chicken out to a toast pan, baste again and cover with foil.
Turn off the oven. Put the covered chicken in the oven again and leave to rest for 10min before serving.
