Since I received some winter melon, I made it into jam.

Since I received some winter melon, I made it into jam.
It will release a lot of moisture, be patient and simmer until the water boils out. It tastes great with a touch of cinnamon added after it's done. Recipe by cucino

Remove the skin from the winter melon and 1/2 of the apple, and finely mince in a food processor. Cube the remaining 1/2 of the apple.

Put the winter melon, apple, lemon juice, and soft light brown sugar in a pot, and mix. Let sit for 10 minutes until the flavors blend.

Simmer on low heat for about 1 hour. Mix from time to time.

If the liquid has not boiled down after 1 hour, increase to medium heat, taking care not to burn it, cook out the moisture, then add the sugar starch.

Transfer to sterilized jars, then store in the refrigerator.
