Last week, we attended a workshop at #CookpadHomeAcademy led by @saracook_and_roll. Although we couldn't prepare the recipe that day, we made up for it this week 😃
What we loved most was that everything was homemade, from the tortillas to the dressing and guacamole. Cooking to your liking is a true pleasure, where we mix and experiment with all our senses and creativity, and where the final result is not as important as the process itself. It doesn't matter if the rice grain is a bit hard in the center or if the meat isn't perfectly colored...
With that playlist in the background, the show begins, the inner alchemist takes over, and the senses are heightened. Then comes the real ritual, when the applause arrives as the dish is placed on the table, and the final compliment when it's tasted, bringing a smile to the face because it's a success (and reward received). At that moment, cooking for others becomes a true pleasure. You become the creator of a good moment, a moment of pleasure, and shared enjoyment.

Ingredients

  1. 3Sliced chicken breasts
  2. 2Free-range eggs
  3. 1 Tablespoongarlic powder
  4. 1 Tablespoonchili flakes
  5. 1 Tablespoonblack pepper
  6. 1 Tablespoonsalt
  7. Unsweetened corn flakes
  8. Shredded mozzarella cheese
  9. Extra virgin olive oil
  10. —For the Caesar dressing:
  11. 1Free-range egg
  12. 2/3 cupextra virgin olive oil (150 ml)
  13. 1 TeaspoonDijon mustard
  14. 1 TeaspoonWorcestershire sauce
  15. 4Anchovies in olive oil
  16. 1 Tablespoongarlic powder
  17. 1/2 cupgrated Parmesan cheese (50 g)
  18. 1Lemon (juice)
  19. 1 Teaspoonblack pepper
  20. —For the guacamole:
  21. 1Ripe avocado
  22. 1Tomato
  23. 1Small onion
  24. Fresh cilantro
  25. 1/2Lemon (juice)
  26. 1Lime (juice)
  27. 1/2 Teaspoonsalt
  28. 1 splashextra virgin olive oil
  29. Cherry tomatoes (for garnish)
  30. —For the tortillas:
  31. 2 cupsall-purpose flour (250 g)
  32. 1/2 cuphot water (120 ml)
  33. 1/4 cupextra virgin olive oil (60 ml)
  34. 1 Teaspoonbaking powder
  35. 1 Teaspoonsalt

Cooking Instructions

~60 minutes (+ marinating time)

    Slice the chicken breasts. In a bowl, mix the eggs and spices. Add the chicken, mix, and let it marinate in the fridge for at least 2 hours.

    After the time has passed, preheat the oven to 410°F (210°C), crush the corn flakes, and coat the chicken with them. Place them on a baking sheet and bake at medium height for about 40 minutes, turning halfway through.

    —FOR THE CAESAR DRESSING. Put everything in a blender jar, and with the blender at the bottom, start blending at maximum speed until the thicker sauce rises to the surface of the oil.

    Homemade Caesar dressing ready! 🥣✅

    —FOR THE GUACAMOLE. Cut the avocado in half, remove the pit, and set it aside. Remove the avocado flesh and mash it with a fork on the serving plate.

    Dice the onion and peeled tomato into small cubes, and finely chop the cilantro. Mix them with the avocado on the plate.
    Add the lemon and lime juice, salt, and olive oil.

    Mix again and refrigerate, placing the pit in the center of the guacamole to prevent browning.

    Homemade guacamole ready! 🥑✅

    —FOR THE TORTILLAS. In a large bowl, mix the flour, salt, and baking powder, and stir well to combine all ingredients. Add the oil and gradually the hot water, while continuing to stir. Knead until you have a smooth and elastic dough ball. Divide into 6 portions, shape them into balls, cover, and let rest for at least 20 minutes.

    After the time has passed, use a press to flatten them. Over high heat, in a skillet brushed with oil, cook them, flipping when they blister and turn golden brown.

    ✳️ To make the quesadilla, heat the tortillas, add the shredded cheese, sliced chicken, and Caesar dressing, and close with another tortilla; flip to melt the cheese completely. Serve with guacamole.
