Crispy Chicken Quesadilla with Caesar Dressing and Homemade Guacamole

Last week, we attended a workshop at #CookpadHomeAcademy led by @saracook_and_roll. Although we couldn't prepare the recipe that day, we made up for it this week 😃
What we loved most was that everything was homemade, from the tortillas to the dressing and guacamole. Cooking to your liking is a true pleasure, where we mix and experiment with all our senses and creativity, and where the final result is not as important as the process itself. It doesn't matter if the rice grain is a bit hard in the center or if the meat isn't perfectly colored...
With that playlist in the background, the show begins, the inner alchemist takes over, and the senses are heightened. Then comes the real ritual, when the applause arrives as the dish is placed on the table, and the final compliment when it's tasted, bringing a smile to the face because it's a success (and reward received). At that moment, cooking for others becomes a true pleasure. You become the creator of a good moment, a moment of pleasure, and shared enjoyment.

Cooking Instructions
- 1
Slice the chicken breasts. In a bowl, mix the eggs and spices. Add the chicken, mix, and let it marinate in the fridge for at least 2 hours.
- 2
After the time has passed, preheat the oven to 410°F (210°C), crush the corn flakes, and coat the chicken with them. Place them on a baking sheet and bake at medium height for about 40 minutes, turning halfway through.
- 3
—FOR THE CAESAR DRESSING. Put everything in a blender jar, and with the blender at the bottom, start blending at maximum speed until the thicker sauce rises to the surface of the oil.

—FOR THE GUACAMOLE. Cut the avocado in half, remove the pit, and set it aside. Remove the avocado flesh and mash it with a fork on the serving plate.
- 6
Dice the onion and peeled tomato into small cubes, and finely chop the cilantro. Mix them with the avocado on the plate.
Add the lemon and lime juice, salt, and olive oil. - 7
Mix again and refrigerate, placing the pit in the center of the guacamole to prevent browning.

—FOR THE TORTILLAS. In a large bowl, mix the flour, salt, and baking powder, and stir well to combine all ingredients. Add the oil and gradually the hot water, while continuing to stir. Knead until you have a smooth and elastic dough ball. Divide into 6 portions, shape them into balls, cover, and let rest for at least 20 minutes.
- 10
After the time has passed, use a press to flatten them. Over high heat, in a skillet brushed with oil, cook them, flipping when they blister and turn golden brown.
- 11
✳️ To make the quesadilla, heat the tortillas, add the shredded cheese, sliced chicken, and Caesar dressing, and close with another tortilla; flip to melt the cheese completely. Serve with guacamole.

Enjoy!

Cannoli with Ricotta and Sea Bass Filling, Guacamole, and Granny Smith Apple Cannoli with Ricotta and Sea Bass Filling, Guacamole, and Granny Smith Apple
What can I say... I might sound a bit immodest if I say it's delicious... But honestly, it's much more than just delicious. These cannoli are made with dough using Passito di Pantelleria wine instead of water. The filling is a sea bass tartare mixed with a creamy ricotta blend. On the side, there's guacamole (it's amazing to dip the cannoli in it as you eat). Plus, there are thin slices of green apple soaked in lemon juice, which cleanse and refresh your palate... Yes, I might be a little immodest, but it's truly delicious! Chicken and Avocado Salad with Balsamic Vinegar Dressing Chicken and Avocado Salad with Balsamic Vinegar Dressing
I thought up a recipe that features the rich fragrance and mild tartness of balsamic vinegar. If you eat it just after mixing everything together, it's lightly flavored, but if you let it rest for a while in the refrigerator, the flavors become more assertive like a marinated salad. The cooking times specified in Steps 4 and 5 are approximates. Adjust the times depending on the thickness of the chicken meat, your cooking equipment and so on. For 2 to 4 servings. Recipe by caramel-cookie cookpad.japan -

This is an amalgamation of flavours! I got inspiration from a Pinterest recipe that called for basil and butter. Surprise Lemon Caesar Dressing Surprise Lemon Caesar Dressing
SURPRISE! There's fish sauce in this recipe. :DThe fish sauce lends that deep, pungent, complex umami and distinct anchovy flavor you get in traditional Caesar dressing. And yes - there are anchovies in your Caesar dressing. Another surprise! You like anchovies better than you thought! And if you already knew there are anchovies in your Caesar dressing, please don't assume I underestimated your knowledge of all things Caesar dressing. I was just talking to those other people... ;)And you can omit the lemon zest if you don't like the extra lemon flavor. The day I took this pic, I used Romaine lettuce, carrots, broccoli, and tomatoes in my salad because that's what I had on hand. You might like to use totally different greens (like Spring Greens or arugula or spinach), or you might like to go more traditional and just do the Romaine and croutons thing. For a quick complete meal, you could cut up the breast of a storebought rotisserie chicken and throw that on top or use some thawed precooked shrimp. My Garlic Parmesan Croutons recipe:https://cookpad.wasmer.app/us/recipes/1846306-garlic-parmesan-croutons x
