Cooking Instructions

Wash the diced meat with cold water. Put the meat in a pot with cold water covering the meat. Bring to a boil, lower the heat, cover and cook slowly for 10 minutes. Remove the meat and wash with cold water to remove any residue stuck to it. Strain and keep the broth.

Heat a frying pan with a drizzle of vegetable oil and brown the meat well.
In a small saucepan, heat 1 tablespoon of vegetable oil and fry the garlic with the ginger.
Add the rest of the sauce ingredients, except the cornstarch and the tablespoon of water.
Add the meat, bring to a boil, lower the heat, cover and cook slowly for 75 minutes, until the meat is tender.
Mix the cornstarch with the tablespoon of water and thicken the stew sauce. - 3
Bring a pot of water to boil and put the Chinese noodles to cook. Cook for a few minutes and strain.

At the main time heat a Wok with sesame oil and sauté the vegetables together, you can add 1 tablespoon of water to steam and cook the eggplant.
Add to the vegetables, the strained Chinese noodles, the meat with the sauce and mix well. - 5
Serve immediately by putting the Chinese noodles on the serving plate and the meat with the vegetables on top.
Drizzle the top with chopped cilantro.

This bourguignon-style hearty beef stew is a very flavorful comfort food that's relatively easy to prepare. A complete and balanced meal, it comes together in one pot (cast iron Dutch oven works best) that slow cooks in the oven. This would probably adapt well to cooking in a large countertop slow cooker, but I've not tried that method.I prefer using pork belly rather than bacon, but my grocery had run out. The only bacon I ever buy is Wright brand thick cut. It's excellent! I also love using whole garlic cloves in this because roast garlic is SO delicious (and I'm a junkie when it comes to garlic and onions). I buy the bag of already peeled fresh garlic cloves just to save a little work. The whole garlic cloves get a deep, roasted flavor and melt into the broth completely.Leftovers freeze really well and are just as delicious when reheated! I like to vacuum seal for the freezer. So don't skip making this because you're a 1 or 2 person household: you'll just have more leftovers to freeze and enjoy later on with no work at all! Maggie Conlon -

I must admit this recipe is really for a beef pie, but the insides where so good, why not just have the insides!! I think it qualifies for stew!! You can cook the first part in a skillet but you do need a Dutch oven to complete it. It is rather fiddly to make but I guarantee you'll be happy with the results. Props to my hubby as well for the photography as usual!! kokomayla
