Almond Rabri is a popular North Indian dessert made from milk, sugar, and almonds along with saunf, cardamom, and saffron for flavor and aroma. Basically, Rabri is thickened sweet milk with malai. Almonds are added to this recipe to thicken and add flavor to the Rabri.

Rabri preparation is easy but it takes time since milk is reduced to a semi-thick consistency. Prepare Rabri in nonstick and broad shape Kadai with continuous stirring which helps in evaporation of the milk faster and prevents milk from burning at the bottom. Scrape the cream that sticks to the sides of the pan occasionally which adds texture to the dessert.

Rabri can be served warm or chilled. It is usually served with shahi tukda, Gulab jamoon, jalebi, malpua, and many more.

Ingredients

  • 3 cupsmilk
  • 2 tbspAlmonds
  • 1/2 tspsaunf/ fennel seeds
  • 2cardamom
  • as required Fry saffron strands
  • 1/4 cupsugar

Steps

30 minutes

    In a nonstick pan take the milk and let it boil on medium flame stirring in between. Meanwhile in the mixer jar take almond, saunf, cardamom, saffron strands and grind to a coarse powder.

    When the milk starts to boil add in powdered mixture along with sugar. Stir well, add a pinch of saffron yellow food color, and mix. Let it continue to boil on medium flame. Keep stirring and scraping the sides. Cook until rabri thickens as per required consistency.
