Ingredients

Serves 2 servings
  1. 1 cupblack chickpeas (about 200 grams)
  2. 1/2 cupwheat berries (about 90 grams)
  3. 2onions, finely chopped
  4. 2-3green chilies, finely chopped
  5. 1 tablespoonginger-garlic paste
  6. 1tomato, finely chopped
  7. 1/2 teaspooncumin seeds
  8. 1 pinchasafoetida (hing)
  9. 1/4 teaspoonturmeric powder
  10. 1/4 teaspoonred chili powder
  11. 1/2 teaspoonroasted cumin powder
  12. 1/2 teaspoondried mango powder (amchur) or chaat masala
  13. Salt to taste
  14. 1/2 cupchopped cilantro (about 8 grams)
  15. 1lemon

    First, rinse the black chickpeas and wheat berries, then soak them overnight.

  2. 2

    In the morning, drain the water from the chickpeas and wheat. Don’t throw away this water—you can drink it as it’s healthy. Now, cook the wheat and chickpeas in a pressure cooker for 4-5 whistles until soft.

    Heat oil in a pan. Add cumin seeds and asafoetida, then sauté the chopped onions and green chilies. Add the ginger-garlic paste. When the onions turn light golden brown, add the chopped tomato and stir.

    Add all the spices: turmeric, red chili powder, and salt to taste. Mix well. Add the boiled chickpeas and wheat, then stir-fry to combine. Add the roasted cumin powder and dried mango powder or chaat masala.

  5. 5

    On low heat, stir-fry the chickpeas and wheat with the spices for 1-2 minutes. Turn off the heat and mix in the chopped cilantro.

    Your fried black chickpea and wheat masala ghughri is ready.

    Serve the chickpea and wheat masala on a plate, squeeze lemon juice over it, and enjoy hot.
