Steps

For Biscuit Base
Take the digestive biscuits and put them in a ziplock bag and beat with a Rolling pin to get a fine powder. - 2
Mix with melted unsalted butter and add to the greased with parchment paper cheesecake tin and press lightly yet firmly with the back of the spatula. The base is ready. Refrigerate till further use.

For Cheesecake Filling
In a bowl add warm Gin, add Tonic, add castor sugar, mix well with a spatula and add gelatine powder, mix again. - 4
In a bowl add full-fat cream cheese and whisk with an Electric beater, add icing sugar and continue whisking, add lime juice and continue whisking.

Add Gin & Tonic mixture and continue whisking. Add double cream and continue whisking

Now add this filling into the biscuit base and tap hard to let out any air bubbles.

Let this sit in the refrigerator overnight.

Put on a cake stand and open the side lock to remove the parchment paper and take out the cake gently.

Garnish with lime slices, lemon slices, lime zest, lemon zest, and icing sugar.
