Ingredients

15-20 minutes
Serves 4-5 servings
  • 2 tablespoonsgalangal
  • 2 tablespoonsginger
  • 2 tablespoonslemongrass
  • 2 tablespoonsshallots
  • 1/2 teaspoonshrimp paste
  • 1 1/2-2 cupscoconut sugar (300-400 grams)
  • 3 tablespoonsfinely toasted coconut

Steps

15-20 minutes
  1. 1

    Toast the shallots, lemongrass, ginger, and galangal until fragrant, then pound them together until fine.

    Simmer the coconut sugar with a little water.

  3. 3

    Add fish sauce, shrimp paste, toasted coconut, and the pounded mixture. Simmer until well combined.

    Taste and continue simmering until the sauce thickens. Remove from heat and let cool.
