Ingredients

30 minutes
3 servings
  1. 250 gmsTindora/ Kundru / Ivy Gourd
  2. 3-4Green Chillies or more as per your taste
  3. 1-2 tbspVeg oil
  4. HandfulCilantro
  5. 3-4Garlic cloves
  6. 1 TspCumin seeds
  7. to TasteSalt
  8. as per your tasteJuice of 1 Lemon (you can use a small dollop of tamarind paste)
  9. Tempering
  10. 1-2 tbspsVeg oil
  11. 1Whole dry red chilli
  12. 1/2 TspMustard seeds
  13. 1/2 TspCumin seeds
  14. 1 pinchHing
  15. 10-15Curry leaves

Steps

30 minutes
  1. 1

    Wash and cut the Tindora in round slices. Roughly chop the chillies too. In a pan heat oil and add the Tindora and chillies and stir fry till Tindora gets cooked and it changes its colour. For about 10-15 minutes on medium flame. Then let in cool. In a mixer grinder, put all ingredients and make it into a paste.

    Heat oil in a pan for tempering. Add in the tempering ingredients. Once the mustard and Cumin seeds start cracking, add in the Tindora paste and mix well. Serve it with Steamed Rice Enjoy !
