Hot and Spicy Schezwan Chilli Potatoes. A mouthwatering recipe. It looks so appealing. Very simple to make at home. A perfect appetizer recipe for parties and gatherings. A perfect starter recipe for vegetarians and all Chinese lovers. It can also be accompanied with some fried rice or noodles. This recipe is a must try.

Firstly, wash, peel and cut the potatoes in to wedges. Soak it in cold water for about 1/2 an hour to remove the excess starch. Remove on kitchen towel and pat it dry. This procedure will make it crispy.

Transfer it into a large mixing bowl. To it, add salt, red chilli sauce/paste/powder and cornflour. Mix until the potatoes are well coated with the cornflour.

Heat oil in a kadhai for deep frying. Carefully drop in the potatoes in the hot oil, few at a time, and fry on medium heat. When almost done, increase flame to high for a minute and fry until golden brown and crispy. Remove on kitchen towel to absorb the extra oil.

Heat oil in a pan. Add the finely chopped garlic and saute for few seconds. Add finely chopped ginger and saute.

Add the slited green chillies/dried red chillies/thinly sliced green bell pepper. Add the chopped shallots/some chopped spring onion whites and saute for a minute or two.

Add salt, black pepper powder, red chilli flakes, soy sauce, red chilli sauce/paste, tomato ketchup, little sugar and schezwan chutney. Saute for few minutes until thick sauce consistency.

Next add the fried potato wedges. Mix well until the potatoes are coated with the sauce. Off the flame.

Spicy and Tempting Schezwan Chilli Potatoes are ready. Serve it hot as a starter or with fried rice or noodles as an accompaniment. You can garnish it with some Spring Onion Greens.
