Ingredients

  1. 1.1 lbs (500 grams)chicken breast and thigh
  2. 1small head cabbage, chopped
  3. 2 1/2 tablespoonsconcentrated tamarind paste
  4. 8 tablespoonsfish sauce
  5. 1 1/2 tablespoonspalm sugar
  6. 1 teaspoonsalt
  7. 6-7shallots
  8. 2-3 stalkslemongrass, sliced diagonally
  9. 1 piecegalangal, sliced
  10. 7-8kaffir lime leaves, torn
  11. 2-3 sprigssawtooth coriander (culantro)
  12. 2 cups (500 ml)coconut milk
  13. 2 cups (500 ml)water
  14. Additional seasoning, as needed
  15. To taste: cilantro, lime juice, fish sauce, Thai bird’s eye chilies, crushed

Steps

  1. 1

    Set the heat to medium-low. Add half of the coconut milk and 2 cups (500 ml) water to a pot and stir to combine. Add the galangal, lemongrass, shallots, and salt.

    You can use either canned or fresh coconut milk. If using fresh, start with the thinner coconut milk and add the thick coconut cream later. Stir often over medium-low heat to prevent the coconut milk from separating.

    When the coconut milk comes to a simmer, add the chicken. Once it returns to a simmer, add the cabbage. Add the seasonings. Pour in the remaining coconut milk and bring to a simmer again. The soup is ready.

    Adding the rest of the coconut milk at the end gives the soup a creamy white color. If the soup is too little, you can add more water.

    When serving, add lime juice, fish sauce, and crushed Thai chilies to taste. Garnish with cilantro.
