Elderberry Drink

Elderberries are not only nutritious but can also help fight cold and flu symptoms, support heart health, reduce inflammation and infections, and may even help prevent cancer. This is also a great drink for boosting your immune system during cold and flu season because it's packed with Vitamin C. My family tried growing this plant in our backyard—it’s very easy to grow, and after just a few months, the tree was full of fruit. With 1 kilogram (about 2.2 pounds) of elderberries, I can make about 5 liters (about 5 1/4 quarts) of juice, which we keep in the fridge to drink gradually.

Ingredients

  • 2.2 poundselderberries (1 kilogram)
  • 1 cuprock sugar (about 200 grams)
  • 6 1/3 quartscold water (6 liters)

Steps

    Remove the elderberries from their stems and wash them thoroughly. Place the berries in a pot with the water and bring to a boil. Let the mixture boil well so the elderberries become soft.

    Use a whisk to stir and mash the elderberries until they are very soft and release their juice. Strain the mixture through a fine mesh sieve, pressing to extract as much liquid as possible and discard the solids. Pour the strained juice back into the pot, add the rock sugar, and heat until the sugar dissolves. The amount of sugar here gives a lightly sweet, refreshing taste—add more sugar if you prefer it sweeter.

    Once the juice has cooled, pour it into clean bottles and store in the refrigerator. Drink daily instead of water to help boost your immune system during cold and flu season.
