  2. 3 1/2 ozcooked spinach, drained and chopped (about 100 grams)
  3. 2 clovesgarlic, chopped
  4. 6quail eggs
  5. 1 3/4 ozfeta cheese (about 50 grams)
  6. 1/3 cuplight cream (about 100 grams)
  7. 1 teaspoonbutter
  8. Salt
  9. Freshly ground black pepper
  10. Thyme
  11. Oregano
  12. Cumin
  13. Sumac (optional)
  14. Olive oil

    Heat a skillet with a little olive oil over medium heat. Sauté the garlic until tender. Add the spinach and cream, then season with 1/2 teaspoon salt and a pinch of black pepper. Stir to combine.
    Preheat the oven to 350°F (180°C). Slice the baguette into 5 or 6 medium slices, depending on the size of your skillet. Top each slice with some of the spinach mixture, then carefully crack a quail egg on top of each so the yolk stays whole.

    Brush the bottom of an oven-safe skillet with the butter and arrange the bread slices inside. Crumble the feta cheese with your fingers and sprinkle it over the spinach. In a small bowl, mix a pinch of thyme, black pepper, sumac, oregano, and cumin, then sprinkle this seasoning over each toast. The slight tang from the sumac makes a difference—if you don't have sumac, you can use a few drops of lemon juice. Fill any empty spaces in the skillet with extra spinach and cheese.
