New quick weekly dinner recipe! Soft pillowy gnocchi with roasted vegetables! It’s so easy and tastes amazing! Absolutely a heart-warming fall dish! 🍁

Preheat oven to 425°F.

Slice bell peppers, onion, and sausage. Cut tomatoes to small cubes. And lay them on a baking sheet.

Drizzle oil on top of the sheet pan. Add oregano and paprika. Mix well. Bake in oven for 25 minutes.

Cook gnocchi in slightly salted boiling water for 3 minutes, then drain the water.

Mix cooked gnocchi with grated Parmesan cheese and oil.

Add cheese coated gnocchi to roasted veggies on sheet pan. Broil the pan for 5 minutes.

Delicious Sheet Pan Gnocchi ready to serve!
