Mexican Bean and Vegetable Rice

Mexican bean and vegetable rice is a one pot meal. It has everything we need to complete a meal. It really tastes delicious. It tastes great served with some nachos, salsa and sour cream.
Raw rice is usually cooked with all the other things in a pot until done but here I have used cooked basmati rice which makes this preparation quick if you have cooked rice earlier. You can even use left over rice.

Ingredients

6 servings
  • 5 cupcooked basmati rice
  • 2 tbspoil
  • 2 tbspbutter
  • 2medium onion
  • 1 tbspcrushed garlic
  • 2green chillies or jalapenos finely chopped
  • 1/2 cupgreen bell pepper diced
  • 1/2 cupred bell pepper diced
  • 1/2 cupyellow bell pepper diced
  • 1/2 cupcarrot parboiled
  • 1/4 cupgreen peas parboiled
  • 3/4 cupcorn kernels parboiled
  • 3/4 cupcooked kidney beans
  • 1.5 cuptomato puree
  • 2 tbsptomato sauce
  • 1.5 tspred chilli powder
  • 3 tspcumin powder
  • 1 tsporegano
  • 1/2 tspblack pepper powder
  • Salt to taste
  • 1 tbsplemon juice
  • 2 tbspcoriander leaves

Steps

    Boil kidney beans and chop all the vegetables required for the rice.

    Heat oil and butter in a pan and add onion and garlic. Saute it until translucent. Now add green chillies to it and cook for a minute. Now add green, yellow and red bell peppers to it and give it a good stir.

    Add tomato puree to it. To make puree, first boil tomatoes, peel and then grind them. Add red chilli powder, cumin powder, oregano, black pepper powder and salt to it and mix it well. Now add tomato sauce and cook it for 2 minutes on medium heat. Add carrots, peas, corn and kidney beans to it and cook on medium heat for 5 minutes.

    Now add cooked rice along with coriander leaves and mix everything well. Cook it on medium heat for 5 to 7 minutes and turn off the heat.

    Mexican bean and vegetable rice is ready to be served. It tastes delicious served with nachos, salsa and sour cream.
