Fill a pressure cooker a little less than halfway with water. Add the bone, salt to taste, chopped green onion, and corn kernels. Cover and cook over medium heat.

Slice the plantain into rounds about 3/4 inch thick (2 cm). Cook in an air fryer or in a skillet with oil at 350°F (180°C) for 8 minutes, flip, and cook for another 4 minutes. Remove and flatten each piece with a board or plate. Set aside.

After 20 minutes, open the pressure cooker and add the carrot, pumpkin, thyme, and oregano to taste. Cover and cook over medium heat for another 10 minutes.

Add the potatoes, the flattened plantain (patacón, not yet fried a second time), and cumin. Cover and cook for 5 more minutes. Adjust salt if needed. Serve hot, garnished with cilantro in each bowl.
