Grilled Mexican Street Corn (Elote)

Elote (pronounced eh-loh-tay) is Mexican street corn. .
Elote refers to fresh corn that is served on a cob or cut kernels. If on the cob it is either grilled or boiled, coated with mayonnaise and dusted with any of the following: chili pepper, salt, cottage cheese, lemon juice and hot sauce.

For mayonnaise mixture:-
In a medium bowl, combine (whisk) mayonnaise, sour cream, garlic, 1 tsp coriander leaves, 1.5 tsp red chilli flakes and lemon juice. - 2
Taste the mixture and add little salt, if needed.(as Crema or sour cream contains little salt). Combine the mixture well and keep it aside.

Place the husked corn directly on the grill grates. Grill the corn till it turn golden brown. Rotate and grill from all sides till its all sides are golden brown.

Remove corn from the grill to a plate.
Brush each corn evenly with the mayonnaise mixture. - 5
Sprinkle with grated cheese. Sprinkle red chilli flakes (optional)

Garnish with chopped coriander leaves and serve immediately.
