Once the dish is completed it is tossed in pad thai sauce, which gives the dish its signature tangy salty flavor with a hint of sweetness.

Ingredients

  1. 250 gRice noodles, Soaked
  2. 10Prawns, shelled, de-veined and back-cut
  3. 1Squid, cut into circle
  4. 1 1/2 cupBean sprouts
  5. 1/2 cupChive, cut 1 inch long
  6. 2tsps Chilies powder
  7. 4Eggs
  8. Pad Thai sauce ;
  9. 300 gPalm sugar
  10. 230 gTamarind juice
  11. 150 gShallot
  12. 60 gGarlic cloves
  13. 180 gFish sauce
  14. 80 mlOlive oil
  15. 100 mlWater

    Pad Thai sauce; Stir fry garlic till turn to brown add tamarind juice, palm sugar, fish sauce, water and deep fried shallot. Leave for 10-15 mins.

    Pad Thai; Stir fry prawns and squid till cook, set aside. Put rice noodles into the pan add some water stir fry till it soft add Pad Thai sauce 3 -4 spoons, stir fry. Then put bean sprouts, chives, prawns and squids stir fry. The last add egg and stir fry till it cook. Serve with fresh bean sprouts, fresh chives, lemon and chilies powder.
