Ingredients

  • For tortillas
  • 2 cupsAll Purpose Flour
  • 3/4 cupboiled and grind corn kernels
  • Salt to taste
  • 1 tbspsugar
  • 1 tbspoil
  • Warm water as needed to knead the dough
  • For the sauce
  • 4medium size tomatoes
  • 2 tbspoil
  • Salt to taste
  • 1 tspred chilli powder
  • 1/2 tspcumin powder
  • 1/2 tspblack pepper powder
  • 1/2 tspItalian herbs
  • 1/4 tspdried mint
  • 1/2 tspwhite vinegar
  • 1 tbspsugar
  • For the Filling For half kg of Chicken breast
  • 2 tbspyoghurt
  • Salt to taste
  • 1 tspred chilli Powder or to taste
  • 1 tspgaram masala powder
  • 1 tspcumin powder
  • 1 tspblack pepper powder
  • 1 tspcoriander powder

Steps

    For the tortillas
    In a bowl seive the all purpose flour add salt and sugar to it mix and then add oil mix it well. Now mix the grind corn kernels and mix it really well. With the help of a warm water knead it to make a soft and smooth dough. The dough shouldn't be too hard or too soft it should be a medium dough. Now keep it aside to rest for 15-20 minutes. Then roll it out just like the roti or chapati and cook it on a griddle.

    Completely cool down the tortillas and put a cling wrap in between every tortilla and keep it in an air tight container. You can store this in the refrigerator for about 7-8 days and in the freezer for 15 days.
    VARIATIONS
    Instead of all purpose flour you can use whole wheat flour also or half and half of both. Use can also make it only with yellow corn flour. If you don't want to make corn tortillas skip the grind corn and rest of the recipe will be same. You can also use the store bought.

    For the sauce
    Make a cris cross mark on the end of the tomatoes and boil it in a pan for 3-4 minutes. Then take it out and remove the skin of tomatoes. In the same pan add oil then mash the tomatoes in it. When starts cooking add the spices and saute it very well. Now add the herbs and mint leaves. Simply crush them on your palms and then add it will enhance the taste. Further add the sugar toss it and finally the vinegar. Saute it and cook for 3-4 minutes.

    With this off goes the flame and at this point taste it to balance the taste. It should bhi sweet, sour, spicey, tangy. Once cool down store it in a neat and clean container and it will be good to eat for 7-8 days in a refrigerator. You can even use this sauce in making pasta or simply with any type of rolls.

    In a pan add the chicken breast and all the spices. Mix it very well when start bubbling lower the flame cover it and cook it till all the water dries. Don't add extra water the chicken itself has a lot of water it will cook very well in it as the chicken breast portion is very tender. Once done off the flame and allow it to cool down a bit.Then with the help of a fork shred it. It will be easily shredded. Your filling is ready. Once cool down completely store it in a clean container.

    You can Store it in the refrigerator for somewhere about 3-4 days. You can always adjust spices according to your taste and preference.
    Assembling the enchiladas
    Take a tortilla and spread the prepared sauce all over the tortilla. Now put the generous amout of prepared filling over it. Then add some shredded cheese to it. Any cheese of your choice. For these type of rolls i prefer mozzarella. Fold it from sides then roll it same as we make the other rolls. Make all the tortillas rolls likewise.

    Now in your baking dish put a layer of prepared sauce. Then put the tortilla rolls in a row. Drizzle some prepared sauce on top of each roll. Then add a lot of shredded mozzarella cheese on top of it and bake it on 180°c for 14-15 mins. You can even grill it in the microwave untill the cheese melts and give a golden brown colour. Serve hot with the same sauce or and dip of your choice with salads or as it is. You can store them in the refrigerator and it will be good to go for 2-3 days.

    When needed take out microwave it and serve it.
    IMPORTANT
    For those who are vegetarian everything from this recipe will be same except the filling make filling with boiled potatoes and paneer or spinach and mushrooms or mix veg any filling of your taste.
