Collect the ingredients.

For seasoning...Take a bowl, add oregano, cornstarch, suji.

Add maida, red chili powder, and hing.

Mix everything properly. Keep aside. Cut potatoes in wedges.

Heat water in a big pan. Add salt, ginger garlic paste to it. Let it to be boil then add potatoes cut wedges, and continue cooking until it is 30% cooked.

Strain it. Place the wedges in a bowl then add seasoning, mix until properly coated.

Place the coated potato wedges on the plate and let them cool down properly. Meanwhile, heat oil in a kadhai on medium flame. Now deep fry the cooled wedges in medium hot oil until cooked properly.

Take it out on absorbent paper. Let them cool down again. Heat the oil on high flame and then again refry until golden brown and crispy.

Take it out on absorbent paper. Sprinkle chat masala, red chili powder before serving. Ready to eat Enjoy😊
