My Salmon & Cottage Cheese & Chives Salad

Add a little olive oil to a pan and skin side down fry the salmon for 2 minutes, then add a lid and cook for a further 3 minutes. I took mine out and finished off in the airfry.

Cut the lettuce and add the red onion on top. Add to a serving plate

In a little bowl add the cottage cheese in the bowl and the thousand island dressing and chopped Chives (keep some chives for the finish)and mix all together.

Add 3/4 of cottage cheese mix on top of the salad keep a little back.

Add the cooked salmon next to the salad and add the rest of the cottage cheese along between the two.

Finish with cracked black pepper over everything and a little lemon juice on the salmon
