I wanted to make basil pesto using fresh aromatic basil direct from a farmer.

Dry-roasting nuts gives extra flavour. You can divide it up into small portions and store in the freezer. If you store in the fridge for a while, keep only portions you will use. Flatten the surface and pour the olive oil on it to avoid any discolouring.
If you leave some nuts chunks when you use the food processor, you can also enjoy the nutty texture. Recipe by KiwieKiwie

Ingredients

4 servings
  • 100 gramsBasil leaves
  • 45 gramsPine nuts
  • 25 gramsPeanuts
  • 2 cloveGarlic
  • 30 gramsGrated parmesan cheese
  • 7 tbspOlive oil
  • 1/2 tspor (as needed) Salt

Steps

  1. 1

    Remove the basil leaves from stem and rinse them well. Then wipe off the moisture and cut roughly.

    Cut the garlic roughly.

    Dry-roast the pine nuts and peanuts in the frying pan.

    When they become fragrant, remove from the heat and cool them down.

    Grate the parmesan cheese or you can use the food processor to grate it.

    Put all ingredients in the food processor and mix. Adjust the cheese or salt amount to taste.
