Creamy Chicken Handi is a creamy and flavourful curry popular all over India.It makes for a perfect week night dinner and also to entertain guests at parties.This curry is traditionally made in a Handi or a clay pot which adds a wonderful earthy flavour to this dish. But if it is not readily available, it can also be made in a pan .Serve this restaurant style exotic dish with roti, naan,paratha or pulao.

Marinate chicken with 1/2 tsp salt and lemon juice for 1 hour.Make a paste of onion and green chillies. Soak melon seeds,almonds and cashewnuts in warm water for 10 minutes.Grind it to a fine paste alongwith ginger garlic paste,curd and malai.Heat oil and ghee.Sprinkle half crushed whole garam masala and fry the marinated chicken. Add the onion green chilli paste and fry.

Finely slice 1 onion in a separate pan and fry till crispy.Set aside.Add other wet paste to the chicken.Add butter chicken masala, kasoori methi, ghee or butter and salt to taste.Fry till oil leaves sides.Add 1 cup water and cook covered till chicken is done.Add crushed fried onion or beresta,few cashewnuts, chopped coriander, few green chillies and cook till semi thick gravy.

Garnish with coriander and malai.Serve hot with roti,paratha,naan or pulao.
