Steps
- 1
In the bowl of a mixer, add the baking soda, flours, and oat bran in order. Mix for a few seconds.
- 2
Add the Greek yogurt, agave syrup, and salt. Knead until you get a ball of dough, about 1 minute and 30 seconds, no more.
- 3
Shape the dough into a loaf. Place it on a baking sheet lined with parchment paper or in a baking pan. Score the top with a knife.
- 4
Bake for about 30 minutes at 350°F (180°C).
- 5
If using a baking pan, bake for 15 minutes, then remove from the pan and bake for another 15 minutes on a rack.
- 6
Let it cool completely on a rack.
- 7
I slice it with an electric knife to get nice, even slices. It keeps for several days in the fridge in a Tupperware container.
