Ingredients

  • Onion, fresh herbs (use any available if you don't have Vietnamese coriander), shallots, lettuce, garlic, chili peppers
  • Dried banh hoi rice vermicelli
  • Chicken

Steps

  1. 1

    Use what you have at home during quarantine.
    Step 1: Make the garlic chili fish sauce. Blend garlic and chili until smooth. To thicken the fish sauce, add just enough water to the garlic and chili, then add a little chili sauce and sugar. Whisk well until combined.

  2. 2

    Step 2: Boil the chicken with a pinch of salt. Shred the chicken into pieces. Finely chop the fresh herbs and mix with sliced onion.

    Step 3: Pour boiling water over the dried banh hoi noodles for about 5 seconds, then drain.

  4. 4

    Step 4: Make fried shallots by heating oil and frying the shallots until golden.

  5. 5

    Step 5: Arrange all the ingredients on a plate with lettuce.
